Delicious Vegan recipes can be hard to come by, especially if you are also looking for easy raw desserts that are suitable for vegans as well!


Today we are going to make a really simple tasty vegan recipe with a few quirks! It's not just a vegan Recipe..it's also made of raw vegetables! Pumpkin has amazing healing properties and is fantastic for helping with sleep disorders and your avocado are awesome for heart health, eye health, blood pressure and much much more.  Each pie is 600 Calories so it's definitely a treat !

Raw Vegan Recipe for Chocolate and Avocado Pie


Vegan Recipes- Base - Make this Vegan Recipe the day prior to let it set
1 Cup of your choice of raw nuts ( anything is fine from this list - hazelnuts, cashews, almonds)
2 tablespoons of honey or agave
2 tablespoons of coconut oil melted
6 medijool dates or 8 soaked dates
1 tablespoon of Cacao Powder

Crush the nuts in the blender until well crushed. Remove and place aside. Put all other ingredients in the blender and whiz until a paste forms. Tip this into the crushed nuts and rub it in to mix. It will be quite mealy and chunky. Press into your pie molds. This makes enough for the pie molds picture which are about 4.5 inches in diameter. You can double the recipe for a large tin or if you want to make more. Once pressed in to the molds you can freeze overnight to set the base . This is a really important step so don't miss it out!


Vegan Recipes - Filling
1 Avocadoavocado pie recipe
1/2 Cup of finely shredded pumpkin
2 tablespoons of  agave ( or honey if your not vegan )
1/2 Cup soaked cashews
2 tablespoons of coconut oil melted
1/2 teaspoon of nutmeg
2 Medijool dates

Blend until a smooth cream forms. Pour into the bases like shown and place in the freezer for 20 minutes to firm up prior to the chocolate layer

Vegan Recipes - Chocolate Topping
2 tablespoons of Cacao
8 Medijool dates
3 melted tablespoons of Coconut Oil
3 Tablespoons of Honey or Agave

Blend all ingredients until a paste forms if it's runny add more dates until its quite thick. Spoon over each pie and then sprinkle with chopped nuts. Freeze for 4 to 6 hours and your done! Remove from the molds while its still quite form.You can store in the freezer or cooler.
